Ingredients

20 chilled clementines, peeled and segmented

1 cup sugar

1/4 teaspoon kosher salt

Directions

  1. Place the chilled clementine segments in a food processor or blender. Pulse until the fruit is broken down into a smooth puree, taking care not to over-blend.

  2. Pass the puree through a fine-mesh strainer into a large bowl, pressing gently on the solids to extract all the juice while leaving behind the pulp and membranes.

  3. In a small saucepan, combine the sugar with 1/4 cup water. Heat over medium heat, stirring constantly until the sugar dissolves completely and the mixture becomes clear, about 3-4 minutes. Do not allow the mixture to boil.

  4. Remove the simple syrup from the heat and let it cool to room temperature, stirring occasionally to speed up cooling.

  5. Pour the cooled simple syrup into the clementine juice, then add the kosher salt. Stir thoroughly to combine all ingredients evenly.

  6. Transfer the sorbet mixture to an ice cream maker and churn according to the manufacturer's instructions, typically 20-30 minutes, until the mixture reaches a smooth, scoopable consistency.

  7. Serve immediately for a softer consistency, or transfer to a freezer-safe container and freeze for at least 2 hours for a firmer texture.
