Spaghetti with Spicy Tomato Sauce

Ingredients
½ pound Spaghetti
1 tablespoon Oil
½ teaspoon Cumin seeds
1 Dried red chili
½ cup Onion, finely chopped
1½ teaspoon Garlic, grated
1½ teaspoon Ginger, grated
2 tablespoons Tomato paste
1 teaspoon Red chili powder
¼ teaspoon Garam masala
Salt, to taste
½ teaspoon Sugar
1 cup Water
2 cups Tomatoes, finely chopped
¼ cup Fresh cilantro, finely chopped
Directions
Bring 4-5 cups of water to a boil in a large pot. Add a generous pinch of salt. Stir in the spaghetti and cook for 8-10 minutes until tender but still slightly firm to the bite. Drain and set aside.
While the pasta cooks, heat the oil in a large pan over medium heat. Add the cumin seeds and dried red chili, allowing them to sizzle and release their fragrance for about 30 seconds.
Add the finely chopped onion to the pan and sauté until soft and translucent, about 3-4 minutes, stirring occasionally.
Stir in the grated garlic, grated ginger, and tomato paste. Cook for 30-40 seconds, stirring constantly to prevent sticking.
Add the red chili powder, garam masala, salt to taste, and sugar. Stir immediately to distribute the spices evenly.
Pour in the water and bring the mixture to a simmer. Let it cook for 5-6 minutes until the sauce thickens slightly.
Add the finely chopped tomatoes and cook for another 2-3 minutes until just heated through and softened.
Fold in the fresh cilantro, then gently toss in the cooked drained spaghetti until well coated with the sauce. Serve immediately.
