Ingredients

2 cups Fresh cauliflower, shredded

1 Large egg

¼ teaspoon Garlic powder

1 teaspoon Italian seasoning

1 cup Shredded mozzarella cheese

Directions

  1. Preheat your oven to 450°F.

  2. Remove the leaves and stems from the cauliflower. Using a box grater or food processor, shred the cauliflower florets until you have about 2 cups of shredded cauliflower.

  3. Place the shredded cauliflower in a microwave-safe bowl and microwave on high for 8 minutes, stirring halfway through. This reduces moisture in the cauliflower.

  4. Add the large egg, shredded mozzarella cheese, garlic powder, and Italian seasoning to the cooked cauliflower. Mix thoroughly until all ingredients are well combined.

  5. Spray a 9-inch pizza pan or cast iron skillet with cooking spray. Press the cauliflower mixture firmly and evenly across the bottom and slightly up the sides to form a crust. Lightly spray the top of the crust with cooking spray.

  6. Bake for approximately 9 minutes, until the crust is golden brown and set. The crust is done when the top is lightly browned and eggs are cooked through (165°F internal temperature).

  7. Remove the crust from the oven and switch the oven setting to broil while you prepare your pizza toppings.

  8. Spread your desired amount of pizza sauce over the baked crust. Top with additional mozzarella cheese and any other desired toppings such as vegetables, herbs, or proteins.

  9. Place the pizza under the broiler for 3 to 5 minutes until the cheese is melted, bubbly, and the crust is golden brown. Watch carefully to prevent burning.
