Ingredients

3 tablespoons canola or olive oil

2 medium onions, chopped

2 cloves garlic, minced

1 1/2 tablespoons chili powder

2 15-ounce cans black beans, drained and rinsed

4 cups chicken or vegetable stock

1 Juice of 1 lime

1/4 cup fresh cilantro, chopped

4 large eggs

Directions

  1. Heat the oil in a large pot over medium heat. Add the chopped onions and sauté for 5-7 minutes, stirring occasionally, until they become soft and begin to turn translucent.

  2. Add the minced garlic to the pot and cook for another minute, stirring frequently, until fragrant.

  3. Sprinkle the chili powder over the onions and garlic, stirring well to coat everything evenly. Cook for 1-2 minutes to bloom the spices.

  4. Pour in the drained black beans and the stock. Stir to combine all ingredients, then bring the mixture to a simmer. Let it cook uncovered for 10-15 minutes, allowing the flavors to meld together.

  5. Remove the pot from heat and stir in the lime juice. Taste and adjust seasoning as needed, adding more chili powder or lime juice to your preference.

  6. While the soup finishes simmering, heat a separate skillet with a small amount of oil over medium-high heat. Crack the eggs into the skillet and fry them to your liking—sunny-side-up works best for this dish. The whites should be set and opaque, and the yolk should reach a minimum internal temperature of 165°F if fully cooked, or remain runny if you prefer. Cook for 3-5 minutes until whites are set.

  7. Ladle the hot soup into individual bowls. Gently place one fried egg on top of each bowl of soup. Garnish with the fresh chopped cilantro and serve immediately.
