2 tablespoons extra virgin olive oil
6 cloves garlic, minced
1 large onion, chopped
2 bay leaves
1 large red bell pepper, chopped
4 carrots, chopped
2 tablespoons chipotle chili powder
1 teaspoon garam masala
1 teaspoon ground cumin
1 tablespoon unsweetened cocoa powder
2 tablespoons molasses
15 ounces crushed tomatoes (1 can)
6 ounces tomato paste (1 can)
30 ounces water
45 ounces canned mixed beans (pinto, kidney, and black beans drained and rinsed)
1 teaspoon salt, or to taste
Ground black pepper to taste
Directions
Heat the olive oil in a large heavy-bottomed pot or Dutch oven over medium heat. Once shimmering, add the minced garlic and cook for about 30 seconds until fragrant, being careful not to brown it.
Add the chopped onion to the pot and sauté for 4-5 minutes, stirring occasionally, until the onion becomes soft and translucent.
Stir in the bay leaves, chopped red bell pepper, and chopped carrots. Cook for another 4-5 minutes, stirring occasionally, until the vegetables begin to soften slightly.
Add the chipotle chili powder, garam masala, ground cumin, and cocoa powder to the pot. Stir continuously for 1-2 minutes to toast the spices and allow them to release their aromatic oils.
Pour in the molasses, crushed tomatoes, tomato paste, and water. Stir well to combine all ingredients thoroughly, breaking up any clumps of tomato paste.
Add the drained and rinsed beans to the pot and stir to distribute evenly throughout the chili.
Season with salt and black pepper to your taste. Bring the chili to a gentle boil, then reduce the heat to low.
Simmer uncovered for 30-35 minutes, stirring occasionally, until the flavors meld together and the mixture reaches your desired thickness. The longer it simmers, the richer and more concentrated the flavors will become.
Remove from heat and let rest for 5 minutes. Taste and adjust seasoning as needed. Remove the bay leaves before serving.
