Curried Cauliflower Melts

Ingredients
½ head cauliflower, sliced into ⅓-inch-thick slabs
3 tablespoons olive oil
Salt and black pepper to taste
¼ cup mayonnaise
¼ to ½ teaspoon curry powder
4 slices hearty multigrain bread
1 golden delicious apple, thinly sliced
4 ounces havarti cheese, sliced
1 teaspoon honey
2 tablespoons butter for toasting
Directions
Preheat your oven to 425°F (220°C).
Arrange the cauliflower slabs on a baking sheet. Drizzle generously with olive oil and season with salt and pepper to your liking. Roast for 30 minutes, turning the slices over halfway through, until the edges are caramelized and tender.
While the cauliflower roasts, whisk together the mayonnaise and curry powder, adjusting the curry powder amount to match your spice preference.
Lay out all 4 bread slices. Spread the curry mayonnaise evenly on each slice.
On two of the bread slices, layer the roasted cauliflower slabs, then drizzle with honey and top with the sliced havarti cheese and thin apple slices. Top each with the remaining bread slices, curry mayo side down.
Spread a thin layer of butter on the exterior of each sandwich, covering both the top and bottom sides.
Heat a skillet or griddle over medium heat until hot. Carefully place one or both sandwiches in the skillet and cook for 1 to 2 minutes until the bread is golden brown and crispy. Flip the sandwiches carefully and cook the other side for another 1 to 2 minutes until golden and the cheese is fully melted.
Remove from heat and serve warm while the cheese is still creamy.
