Ingredients
1 portion ramen noodles (about 100g, store-bought or homemade)
2 tablespoons XO sauce
2 tablespoons rendered pork fat or neutral oil
1 tablespoon rice vinegar
1 tablespoon soy sauce
Sliced scallions for garnish
1 onsen egg, optional (soft-cooked with 160F minimum internal temperature)
5 to 6 blanched sugar snap peas, optional
Small bunch of radish sprouts, optional
Directions
Bring a pot of salted water to a rolling boil. Cook the ramen noodles according to package directions until tender, then drain well and set aside.
In a bowl, combine the XO sauce, rendered pork fat, rice vinegar, and soy sauce. Stir until evenly mixed into a dressing.
Add the cooked, drained noodles to the dressing and toss vigorously until the noodles are evenly coated and separated.
Transfer the noodles to a serving bowl. If using an onsen egg, prepare it by gently simmering in water until the white reaches 160F internally, then place on top of the noodles.
Arrange the optional blanched sugar snap peas and radish sprouts on and around the noodles. Scatter sliced scallions over the top and serve immediately.
