Ingredients

1 baguette

1/2 cup crème fraîche

1 package organic smoked salmon

1 ripe avocado, cut into thin strips

sea salt to taste

freshly ground pepper to taste

2 lemons, cut into wedges

Directions

  1. Preheat your oven to 400°F (200°C). Slice the baguette diagonally into approximately 1/4-inch thick slices, yielding about 20 toasts.

  2. Arrange the baguette slices in a single layer on a baking sheet. Toast in the preheated oven for 3–4 minutes until the edges are golden and the surface begins to crisp, being careful not to burn them.

  3. Remove the toasts from the oven and let them cool slightly for 1–2 minutes on the baking sheet so they firm up.

  4. Spread approximately 1 teaspoon of crème fraîche evenly across each toasted baguette slice.

  5. Tear or fold pieces of smoked salmon and layer them gently over the crème fraîche on each toast.

  6. Arrange 2–3 thin strips of avocado on top of the salmon, fanning them slightly for an elegant presentation.

  7. Finish each toast with a light sprinkle of sea salt and a small grind of freshly ground pepper.

  8. Transfer the assembled toasts to a serving platter and serve immediately with fresh lemon wedges on the side for guests to squeeze over as desired.
