Ingredients
1 cup all purpose flour
1 teaspoon baking soda
¾ cup brown sugar
4 ounces cream cheese, softened
1 egg, beaten
1 cup quick oats
3 peaches, peeled and sliced
⅓ cup powdered sugar
½ teaspoon salt
¾ cup unsalted butter, melted and cooled
½ teaspoon vanilla extract
Directions
Preheat your oven to 350°F. In a medium bowl, use a hand mixer to beat together the softened cream cheese, powdered sugar, beaten egg, and vanilla extract until smooth and well combined. Set this mixture aside. Prepare an 8x9 inch baking dish by spraying it with cooking spray or lining it with foil.
In a separate bowl, whisk together the flour, salt, and baking soda. Add the quick oats, melted and cooled butter, and brown sugar to the dry ingredients. Stir with a wooden spoon until all ingredients are evenly moistened and the mixture comes together.
Press half of the oat crumble mixture firmly into the bottom of the prepared baking dish, creating an even base layer. Place the dish in the preheated oven and bake for 8 minutes until lightly set.
Remove the baking dish from the oven and allow the crust to cool for 10 to 15 minutes. Once cooled, spread the reserved cream cheese mixture evenly over the crust as the second layer.
Arrange the peeled and sliced peaches on top of the cream cheese layer, distributing them evenly across the surface. Crumble the remaining oat mixture over the peaches to create the top crumble layer.
Return the baking dish to the oven and bake for an additional 15 minutes, until the top crumble is golden brown and the filling is set. Remove from the oven and allow to cool before cutting into 9 bars.
