Ingredients

1/4 cup butter

1/4 cup coconut oil

1/2 cup honey

2 teaspoons pure vanilla extract

4 cups old-fashioned oats

1/2 cup shredded unsweetened coconut

1/2 cup chopped dried fruit

1/2 cup chopped nuts

1/4 cup whole wheat flour

1/2 teaspoon ground cinnamon

1/2 teaspoon kosher salt

Directions

  1. Preheat your oven to 325°F. Line a 13×9-inch baking pan with parchment paper for easy removal.

  2. In a large mixing bowl, combine the oats, shredded coconut, chopped dried fruit, chopped nuts, whole wheat flour, cinnamon, and salt. Stir until everything is evenly distributed.

  3. In a medium saucepan, gently warm the butter and coconut oil together over low heat until melted. Remove from heat and stir in the honey and vanilla extract until smooth.

  4. Pour the honey-butter mixture over the dry ingredients and stir well until all the oats and other ingredients are thoroughly coated.

  5. Transfer the mixture to the prepared baking pan. Press down firmly and evenly using a small piece of parchment paper or the bottom of a measuring cup.

  6. Bake at 325°F for 30–35 minutes until the top is golden brown and the mixture is set.

  7. Remove from the oven and allow to cool completely in the pan before cutting into bars. Store leftovers in an airtight container for up to 3 days.
