Ingredients

2 cups Fresh strawberries

2 tablespoons Pure maple syrup

2 teaspoons Aged balsamic vinegar

to taste Freshly ground black pepper

15 ounces Greek yogurt

2 tablespoons Raw honey

a few leaves Fresh mint leaves

Directions

  1. Rinse the strawberries under cool water. Remove the stems and slice the berries into even pieces.

  2. Transfer the sliced strawberries to a small bowl. Add the maple syrup and aged balsamic vinegar, and stir gently to combine.

  3. Allow the strawberries to macerate (sit) for approximately 30 minutes. Stir the mixture occasionally to ensure the berries absorb the liquid evenly.

  4. Just before serving, grind fresh black pepper over the macerated strawberries to taste. Stir gently to incorporate.

  5. In a separate small bowl, combine the Greek yogurt with honey, stirring until smooth and evenly sweetened. Adjust honey level to your preference.

  6. Stack the mint leaves and slice them thinly into thin ribbons (chiffonade).

  7. To serve, spoon a dollop of the honey-sweetened yogurt into each serving bowl. Top with the macerated strawberries and their juices, then garnish with the fresh mint ribbons.
