Ingredients

1/2 cup (1 stick) softened butter

3/4 cup sugar

2 eggs

1/4 teaspoon almond extract

1 cup all-purpose flour

1/4 teaspoon salt

3/4 cup white chocolate chips, divided

3/4 cup chopped macadamia nuts, divided

Directions

  1. Preheat your oven to 350°F. Grease or line an 8 by 8 inch square baking pan with parchment paper and set aside.

  2. In a large bowl, using an electric mixer on medium speed, cream together the softened butter and sugar until the mixture is light and fluffy, about 2-3 minutes.

  3. Add the eggs one at a time, beating well after each addition to fully incorporate.

  4. Mix in the almond extract until combined.

  5. In a small bowl, whisk together the flour and salt. Gradually add the flour mixture to the butter mixture, mixing on low speed until just combined.

  6. Fold in 1/2 cup of the white chocolate chips and 1/2 cup of the chopped macadamia nuts, stirring just until incorporated.

  7. Spread the thick batter evenly into the prepared baking pan. Sprinkle the remaining 1/4 cup of macadamia nuts over the top. Do not add the remaining white chocolate chips yet, as they will burn during baking.

  8. Bake for 25 minutes, until the edges are golden brown and a toothpick inserted into the center comes out clean.

  9. Remove the pan from the oven and immediately sprinkle the remaining 1/4 cup white chocolate chips over the hot bars. Allow them to soften for a minute, then spread gently if desired. Cool completely before cutting into 9 bars.
