Ingredients
2 oz cheddar cheese, cubed
4 cherry tomatoes
1 small cucumber, cut into chunks
4 small wooden or plastic skewers (3 inches long)
1 whole wheat tortilla
1–2 tablespoons organic peanut butter
1 tablespoon jelly or jam of your choice
2–3 almonds
2–3 cashews
2–3 walnuts
1/3 cup chopped fresh fruit
2–3 pieces dried banana or mixed dried fruit
Directions
Thread cheese cubes, cherry tomatoes, and cucumber chunks onto the skewers, alternating ingredients. Arrange the filled skewers in the main compartment of your lunchbox.
Spread the peanut butter evenly onto the whole wheat tortilla, leaving at least 2 inches from each edge.
Spread the jelly or jam over the peanut butter layer.
Roll the tortilla tightly and cut into 1-inch thick spiral slices. Place the roll-ups in another section of your lunchbox.
In a small bowl or container, combine the almonds, cashews, walnuts, dried fruit, and fresh chopped fruit to create your trail mix. Transfer to a small compartment in the lunchbox.
Arrange all three components in your lunchbox, keeping each section separate. Your complete lunch is now ready to take with you.
