3 pounds medium lemons (10 to 14 lemons)

6 ounces fresh red chiles (such as red finger chiles, cayenne peppers, or Fresno peppers), stemmed and minced

2 cups granulated sugar

3 cups cold water

Directions

  1. Wash the lemons thoroughly under cold running water and pat them dry with a clean cloth.

  2. Cut the lemons in half and juice them using a citrus juicer or by hand, straining out any seeds and pulp. You should have approximately 1.5 to 2 cups of fresh lemon juice.

  3. Prepare the fresh red chiles by removing the stems and mincing them finely, wearing gloves to protect your hands from the heat. Reserve the minced chiles.

  4. In a large pitcher or bowl, combine the fresh lemon juice with the minced chiles and granulated sugar.

  5. Stir vigorously for several minutes until the sugar is completely dissolved and the mixture is well combined.

  6. Pour in the cold water and stir until all ingredients are thoroughly blended.

  7. Taste and adjust the sweetness or spice level as desired by adding more water or additional minced chiles.

  8. Serve immediately over ice, or chill in the refrigerator until ready to serve. The flavor will intensify as the drink sits.
