Ingredients
1 cup buttermilk
½ cup canola or vegetable oil
2 large eggs
3 cups all-purpose flour
2 tablespoons granulated sugar
4 teaspoons baking powder
1 teaspoon dried basil
2 teaspoons dried parsley
½ teaspoon dried oregano
2 cups shredded cheddar cheese
16 pepperonis, cut into quarters
Directions
Preheat your oven to 425°F. Prepare a standard 12-cup muffin tin by lightly spraying with cooking spray or inserting paper liners. Have a second tin ready for the 2 additional muffins.
In a large mixing bowl, combine the buttermilk, oil, and eggs. Beat well until fully incorporated and smooth.
Gradually add the flour, sugar, basil, parsley, and oregano to the wet mixture. Stir until the dry ingredients are just moistened; do not overmix.
Gently fold in the baking powder, shredded cheddar cheese, and pepperoni pieces with a spatula until evenly distributed throughout the batter.
Divide the batter among the prepared muffin cups, filling each about three-quarters full.
Bake at 425°F for 5 minutes, then reduce the oven temperature to 375°F and continue baking for 10–11 minutes, until a toothpick inserted into a muffin comes out clean and the tops are lightly golden.
Allow the muffins to cool completely in the tin before turning them out onto a wire rack or serving plate.
