12 Large eggs

4 cups Whole milk

Directions

  1. Crack the eggs into a large mixing bowl and beat them together with a whisk or fork until fully combined and uniform in color.

  2. Pour the whole milk into the beaten eggs and stir together until well blended. Add the salt and mix thoroughly to distribute evenly.

  3. Pour the egg and milk mixture into a large heavy-bottomed pot or Dutch oven. Place over medium-low heat.

  4. Stir the mixture constantly with a wooden spoon or whisk, ensuring you reach all the corners and bottom of the pot to prevent sticking and promote even cooking.

  5. Continue heating and stirring as the mixture gradually thickens and begins to curdle. The eggs will cook and separate into soft curds while the liquid becomes clearer, similar to making scrambled eggs but with slower, more deliberate heat.

  6. When the curds have formed and the mixture has reached a creamy, curdled consistency (approximately 160°F internal temperature for food safety), remove the pot from heat.

  7. Gently strain the mixture through a fine-mesh sieve or cheesecloth into a serving dish, allowing the whey to drain away while keeping the delicate curds intact.

  8. Serve the hrutka warm as a main course. It can be eaten plain or with a drizzle of butter, fresh herbs, or sautéed mushrooms if desired.
