Ingredients
8 ripe tomatoes, washed and chopped
1 tablespoon vegetable oil
1/2 cup onion, chopped
1/2 cup green bell pepper, chopped
1/4 cup carrot, thinly sliced or shredded
2 teaspoons minced garlic
1/2 teaspoon dried oregano
1 teaspoon dried basil
Black pepper to taste
Directions
Wash your hands thoroughly with soap and water. Rinse the tomatoes under cool running water and pat dry. Cut out and discard the stem ends from each tomato, then chop them into small, uniform pieces. Transfer the chopped tomatoes to a large bowl and set aside.
Heat the vegetable oil in a large saucepan or pot over medium-high heat until shimmering.
Add the chopped onion, green bell pepper, carrot, and minced garlic to the hot oil. Stir frequently and cook until the vegetables become tender and softened, about 3 minutes.
Sprinkle the dried oregano and dried basil over the vegetables and stir to combine the seasonings evenly.
Pour the reserved chopped tomatoes into the pan with the vegetables, stirring gently to combine all ingredients. Increase the heat slightly to bring the mixture to a gentle boil, stirring occasionally.
Once the sauce reaches a boil, reduce the heat to low and simmer uncovered for approximately 40 minutes, stirring occasionally. The tomatoes will gradually break down and the sauce will thicken and deepen in color. The sauce is ready when the tomatoes have completely softened and the mixture has a rich, cohesive consistency.
Taste the sauce and season with black pepper as desired. Serve the warm sauce immediately over freshly cooked pasta or use according to your recipe.
