Ingredients
1 can (15 ounces) tropical fruit salad in 100% juice
3 tablespoons reserved juice from tropical fruit salad
1/2 cup natural peanut butter, crunchy or chunky
3 tablespoons fat-free cream cheese
1 tablespoon low-sodium soy sauce
4 whole-grain pita pockets
4 cups fresh spinach, torn
1/4 cup fresh cilantro, optional
Directions
Place the tropical fruit salad in a colander set over a bowl. Drain the fruit thoroughly, allowing the juice to collect in the bowl. Measure out and reserve 3 tablespoons of the juice for the spread; discard or reserve the remainder for another use.
In a small bowl, whisk together the 3 tablespoons of reserved fruit juice, peanut butter, cream cheese, and soy sauce until well combined and smooth, creating a creamy peanut sauce.
In a large bowl, combine the drained tropical fruit, torn spinach, and cilantro if using. Gently toss the mixture to blend the ingredients.
Pour the peanut sauce over the fruit and spinach mixture. Toss gently until everything is evenly coated with the sauce.
Using a sharp knife, carefully slice off a small triangular portion from the top edge of each pita pocket, creating an opening large enough to insert the filling.
Tuck the small slice of pita you removed back inside the bottom of the pocket to create a barrier that prevents filling from leaking out the bottom.
Divide the fruit and spinach mixture evenly among the four prepared pita pockets, filling each one generously.
Wrap each filled pita pocket individually in plastic wrap, sealing it securely to keep the contents fresh and the wrap intact during transport or storage.
Refrigerate the wrapped pita pockets for at least 30 minutes before serving. They will keep well refrigerated overnight, making them ideal for meal prep.
