Ingredients
1 (9 to 9½ inch) deep dish pastry crust or homemade graham cracker crust
1 (14 oz) can sweetened condensed milk
8 oz cream cheese, softened
1⅓ cups heavy whipping cream
⅓ cup powdered sugar
1½ teaspoons vanilla extract
1 cup toasted and chopped pecans
1 (20 oz) can crushed pineapple, drained and pressed dry
Directions
Preheat oven and prepare the pie crust according to package directions. Bake until golden brown and fully cooked through. Remove from the oven and allow the crust to cool to room temperature.
In a large mixing bowl, whip the heavy cream with an electric mixer on medium-high speed until soft peaks form.
Add the powdered sugar and vanilla extract to the whipped cream and continue beating until stiff peaks form. Set the whipped cream aside.
In a separate bowl, beat the softened cream cheese until smooth and creamy.
Pour the condensed milk into the cream cheese mixture and beat until well combined and uniform.
Gently fold the drained pineapple into the cream cheese mixture until evenly distributed.
Carefully fold the stiff whipped cream into the pineapple-cream cheese mixture in two additions, being gentle to maintain the airy texture.
Fold in the toasted pecans until evenly scattered throughout the filling.
Spoon the filling into the cooled pie crust, mounding it gently. The filling should be nearly level with the top of the crust.
Cover the filled pie with plastic wrap and place in the freezer. Freeze for at least 4 hours, or until the filling is completely firm and slices cleanly.
To serve, remove the pie from the freezer and let it sit at room temperature for 5-10 minutes to soften slightly before slicing. Cut into wedges with a sharp, warm knife.
Alternatively, slice the pie while frozen, wrap individual pieces in plastic wrap, and store in a freezer bag for up to 3 weeks. Thaw for a few minutes before enjoying.
