Kimchi and Spam Fried Rice

Ingredients
2 cups cooked white rice
3/4 pound kimchi with juices
2 tablespoons vegetable oil, divided
1 (12-ounce) can of Spam, cut into small dice
1 large onion, finely diced
4 scallions, white and pale green parts only, thinly sliced
2 medium cloves garlic, minced
1 hot red or green chili, stemmed and thinly sliced
Freshly ground black pepper to taste
2 teaspoons Asian fish sauce
1 teaspoon toasted sesame oil
1/2 cup chopped fresh cilantro
Kosher salt to taste
Fried eggs, for serving
Hot sauce, for serving
Directions
Cut the Spam into 1/4- to 1/2-inch cubes. Dice the onion finely and slice the scallions (white and pale green parts only). Mince the garlic and slice the chili thinly. Chop the cilantro.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Add the diced Spam and cook for 2-3 minutes until the edges begin to brown, stirring occasionally. Transfer to a plate.
In the same skillet, add the remaining 1 tablespoon of oil. Add the diced onion and cook for 1-2 minutes until starting to soften, stirring frequently.
Add the minced garlic and sliced chili to the skillet, stirring constantly for about 30 seconds until fragrant.
Add the kimchi with its juices to the skillet and stir-fry for 1 minute to release flavors.
Add the cooked rice to the skillet, breaking up any clumps. Stir-fry for 2-3 minutes, ensuring the rice is heated through and coated with the kimchi and seasonings.
Return the cooked Spam to the skillet. Add the fish sauce, sesame oil, and black pepper. Toss everything together for about 1 minute until well combined.
Remove from heat and stir in the sliced scallions and fresh cilantro. Taste and adjust seasoning with salt and pepper as needed.
Divide the fried rice among serving bowls. Top each portion with a fried egg and serve with hot sauce on the side.
