Hearty Beef Chili

Ingredients
1 (28 ounce) can diced tomatoes, undrained
1 (10 ounce) can chopped tomatoes and green chile peppers, undrained
2 cups vegetable juice or tomato juice
1 to 2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano, crushed
3 cloves garlic, minced
1½ pounds beef stew meat, cut into 1-inch cubes
2 cups chopped onion
1½ cups chopped celery
1 cup chopped green bell pepper
2 (15 ounce) cans black beans, kidney beans, and/or garbanzo beans, rinsed and drained
Optional toppings: shredded cheddar cheese, sour cream, fresh cilantro, or ripe olives
Directions
In a large pot or Dutch oven, combine the diced tomatoes with their juices, the can of chopped tomatoes and green chiles with their liquid, and the vegetable or tomato juice. Stir in the chili powder, ground cumin, crushed oregano, and minced garlic until well combined.
Add the beef stew meat cubes to the pot, stirring to coat them in the liquid mixture. Bring to a simmer over medium-high heat, then reduce heat to low, cover, and simmer gently for about 2 to 2.5 hours, until the beef is very tender when pierced with a fork.
While the beef cooks, prepare the vegetables by chopping the onion, celery, and green bell pepper into bite-sized pieces.
After the beef has cooked for about 2 hours, add the chopped onion, celery, and green bell pepper to the pot and stir well. Continue simmering uncovered for another 30 minutes until the vegetables are tender.
Rinse the canned beans thoroughly under cold water to remove excess salt and starch, then drain well. Stir the beans into the chili and simmer for an additional 10 minutes to heat through and allow flavors to meld.
Taste the chili and adjust seasonings as desired, adding more chili powder, cumin, or salt to your preference. Ladle into serving bowls and top with your choice of optional garnishes if desired.
