1 teaspoon Vegetable oil

½ cup Onion, chopped

4 cups Cooked hominy, drained

2 cans (4 ounces each) Canned chopped green chiles, drained

1 cup Non-fat sour cream

1 teaspoon Chili powder

⅛ teaspoon Black pepper

¾ cup Shredded cheddar cheese, divided

Directions

  1. Wash your hands thoroughly with soap and water before beginning.

  2. Heat the vegetable oil in a large skillet over medium-high heat until shimmering, about 1 minute.

  3. Add the chopped onion and cook, stirring occasionally, until softened and translucent, about 2 to 3 minutes.

  4. Stir in the cooked hominy, drained green chiles, sour cream, chili powder, and black pepper. Mix well to combine all ingredients evenly.

  5. Add half of the shredded cheddar cheese (about 3/8 cup) to the skillet and stir until fully incorporated.

  6. Reduce the heat to medium. Cover the skillet with a lid.

  7. Cook covered until the mixture is heated through, about 3 to 5 minutes, stirring occasionally to prevent sticking.

  8. Sprinkle the remaining cheese (about 3/8 cup) evenly over the top of the mixture.

  9. Cover the skillet again and cook until the cheese is completely melted and bubbly, about 5 minutes. Remove from heat and serve hot.
