Ingredients
2 cups Cooked quinoa
1 Small eggplant, sliced lengthwise into thick planks
¾ cup Extra virgin olive oil
¼ cup Fresh flat-leaf parsley, roughly chopped
1 tablespoon Honey
Kosher salt
1 tablespoon Fresh lemon juice
1 Orange bell pepper, halved, stemmed, and seeded
Freshly cracked black pepper
1 Small to medium red onion, halved
4 Tomatoes, sliced into thick rounds
¼ cup White balsamic vinegar
1 Medium zucchini, sliced lengthwise into thick planks
Directions
Heat a grill pan or outdoor grill to medium-high heat until very hot, about 3 to 5 minutes. Lightly brush the grill grates with olive oil to prevent sticking.
Working in batches to avoid crowding, arrange the eggplant slices, zucchini slices, bell pepper halves, tomato slices, and red onion halves on the grill. Brush the exposed sides of each vegetable generously with olive oil, and season with kosher salt and freshly cracked black pepper.
Grill the vegetables for 4 to 6 minutes on the first side until you see attractive grill marks and the surface is lightly charred. Flip each piece carefully, brush again with olive oil, and season with salt and pepper. Continue grilling for 4 to 6 minutes more until the vegetables are tender when pierced with a fork and caramelized on the second side.
Transfer the cooked vegetables to a cutting board and allow them to cool slightly. Once cool enough to handle, roughly chop the grilled vegetables into bite-sized pieces, keeping them in a large bowl.
In a small bowl, whisk together the white balsamic vinegar, lemon juice, honey, and 2 tablespoons of the chopped fresh parsley. Slowly whisk in 2 tablespoons of olive oil until the vinaigrette is well combined. Season with a pinch of salt and pepper to taste.
Add the cooked quinoa to the bowl with the grilled vegetables. Pour the parsley vinaigrette over the quinoa and vegetables, and toss gently to combine, ensuring everything is evenly coated. Taste and adjust seasoning as needed.
Transfer the grilled ratatouille quinoa to a serving platter or individual bowls, and garnish with the reserved fresh parsley. Serve at room temperature or slightly warm.
