Ingredients
2½ lb. Red potatoes
2 slices Bacon, uncooked
½ tsp. Salt
¼ tsp. Coarsely ground black pepper
2 Green onions, sliced
3 tbsp. Cider vinegar
2 tsp. Sugar
Directions
Scrub the red potatoes under cold water to remove any dirt, then cut them into quarters, leaving the skin on for authentic texture and flavor.
Bring a large pot of salted water to a boil and add the potato quarters. Cook until fork-tender, about 15-20 minutes, then drain well.
While the potatoes cook, cut the bacon slices into small pieces and cook them in a large skillet over medium heat until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and set aside on a paper towel.
Slice the green onions into thin rounds, separating the white and light green parts from the darker green tops.
Add the cider vinegar and sugar to the skillet with the warm bacon drippings. Stir over medium-low heat until the sugar dissolves, about 1 minute.
Transfer the warm drained potatoes to a large mixing bowl. Add the cooked bacon, white and light green parts of the green onions, salt, and black pepper.
Pour the warm vinegar mixture over the potatoes and gently toss until everything is evenly coated. The warm potatoes will absorb the dressing flavors.
Top the salad with the reserved darker green onion tops and serve warm.
