Ingredients

3 boneless skinless chicken breasts

2 tablespoons Cajun seasoning

2 garlic cloves, minced

1 green bell pepper, thinly sliced

1 red bell pepper, thinly sliced

1 white onion, thinly sliced

9 slices pepper jack cheese, halved

2 tablespoons olive oil

1 tablespoon fresh parsley, for garnish

Directions

  1. Preheat your oven to 400°F.

  2. Place the chicken breasts on a cutting board. Carefully make 5 horizontal slits across the thickness of each breast, cutting about three-quarters of the way through but not all the way to create a pocket for stuffing.

  3. Drizzle the olive oil over the chicken breasts and distribute evenly. Sprinkle the minced garlic over the tops and season generously with Cajun seasoning, coating all sides.

  4. Stuff each chicken breast's pockets evenly with the sliced red and green bell peppers, white onion, and halved pepper jack cheese slices, dividing the filling ingredients among all three breasts.

  5. Transfer the stuffed chicken breasts to a baking dish and place in the preheated oven. Bake for 25 minutes until the chicken reaches an internal temperature of 165°F and is cooked through with no pink remaining.

  6. Remove from the oven and garnish with fresh parsley. Serve hot.
