Ingredients

1/4 cup soy sauce

1/4 cup cider vinegar

2 tablespoons honey

2 tablespoons canola oil

2 green onions, minced

3 skinless, boneless chicken breast halves, cut into 1-inch cubes

1 pound thick-cut bacon, cut in half

20 cremini mushrooms, scrubbed and patted dry

1 pineapple, peeled and cut into 1-inch cubes

Bamboo skewers, soaked in water for 30 minutes

Directions

  1. Soak bamboo skewers in cold water for at least 30 minutes to prevent charring during grilling.

  2. In a small bowl, whisk together soy sauce, cider vinegar, honey, canola oil, and minced green onions to create the marinade and glaze.

  3. Pat the chicken breast cubes dry with paper towels and season lightly with salt and pepper.

  4. Wrap each chicken cube tightly with a half-slice of bacon, securing the seam with a toothpick if needed.

  5. Thread the bacon-wrapped chicken, pineapple cubes, and mushrooms alternately onto the soaked skewers, beginning and ending with a piece of fruit or vegetable.

  6. Brush the kabobs generously with the soy-honey glaze on all sides, reserving some glaze for basting during cooking.

  7. Preheat your grill to medium-high heat (around 400°F), and lightly oil the grates to prevent sticking.

  8. Place the kabobs on the hot grill, leaving space between each skewer for even heat circulation.

  9. Grill for 12 to 15 minutes, turning every 3 to 4 minutes and basting with the reserved glaze, until the chicken reaches an internal temperature of 165°F and the bacon is crispy and caramelized.

  10. Transfer the kabobs to a serving platter and let rest for 2 to 3 minutes before serving.
