Ingredients

2 cups granulated sugar

3/4 cup unsalted butter

2/3 cup heavy cream

1/4 cup Irish cream liqueur

7 ounces marshmallow cream

12 ounces semi-sweet chocolate morsels

Directions

  1. Line an 8-inch square pan with parchment paper, allowing it to overhang slightly on two sides for easy removal. Set the prepared pan aside.

  2. In a large saucepan, combine the sugar, butter, and heavy cream. Place over medium-high heat and stir constantly until the mixture reaches a boil.

  3. Once boiling, continue to cook for 3 to 4 minutes while stirring occasionally to prevent sticking.

  4. Remove the pan from the heat and stir in the Irish cream liqueur until well incorporated.

  5. In a large mixing bowl, combine the marshmallow cream and semi-sweet chocolate morsels.

  6. Pour the hot Irish cream mixture over the chocolate and marshmallow mixture. Let sit for 1 minute to allow the chocolate to begin melting.

  7. Using an electric mixer on medium speed, beat the mixture until smooth and creamy, about 1 to 2 minutes, until the chocolate is fully melted and incorporated.

  8. Pour the fudge mixture into the prepared pan, spreading evenly with a spatula. Refrigerate until firm, approximately 4 hours.

  9. Once set, lift the fudge from the pan using the parchment overhang and cut into squares with a sharp, lightly oiled knife. Store in an airtight container in the refrigerator.
