Ingredients
4 potatoes (about 1 pound)
1 cup diced onion
1/2 cup chopped celery
1/2 cup low-fat mayonnaise
1/4 cup sweet pickle relish
Directions
Wash your hands thoroughly with soap and water before beginning food preparation.
Scrub the potatoes under running water to remove any dirt, then peel them with a vegetable peeler or knife.
Cut the peeled potatoes into 1-inch cubes and place them in a saucepan.
Cover the potatoes with cold water, then bring to a boil over medium heat.
Once boiling, reduce heat and simmer for about 15 minutes until the potatoes are fork-tender and easily pierce through.
Carefully drain the hot water from the potatoes and spread them on a plate to cool to room temperature.
While the potatoes are cooling, peel and finely dice the onion until you have 1 cup.
Chop the celery into small pieces until you have 1/2 cup.
In a medium mixing bowl, combine the diced onion and chopped celery.
Add the mayonnaise and pickle relish to the bowl and stir until well combined.
Once the potatoes have cooled completely, add them to the bowl and gently fold everything together until evenly coated.
Cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours before serving to allow flavors to meld.
