Ingredients

1 1/2 cups jasmine rice

2 tablespoons unsalted butter

4 garlic cloves, minced

3 tablespoons tomato paste

1 3/4 cups water

2 teaspoons soy sauce

1/2 teaspoon table salt

Directions

  1. Rinse the jasmine rice in a fine-mesh strainer under cold running water, stirring gently, until the water runs completely clear. Let drain thoroughly.

  2. Melt the butter in a medium saucepan over medium-high heat. Add the drained rice and stir constantly for 1 to 3 minutes, until the grains turn chalky and lose their shine.

  3. Add the minced garlic and stir constantly for about 30 seconds until fragrant.

  4. Stir in the tomato paste, mixing constantly for about 1 minute until evenly incorporated throughout the rice.

  5. Pour in the water, soy sauce, and salt. Stir to combine and bring the mixture to a boil over medium-high heat.

  6. Reduce heat to low, cover the saucepan with a lid, and simmer for about 20 minutes until all liquid is absorbed and the rice is tender.

  7. Remove from heat and let the rice stand, covered, for 10 minutes to allow the grains to fully absorb any remaining moisture.

  8. Fluff the rice with a fork, stirring gently to distribute the red color evenly, and serve immediately.
