Ingredients

2½ cups Old-fashioned oats

1 cup Almonds, roughly chopped

½ cup Shredded coconut

¼ cup Raw sunflower seeds

1 cup Dried cranberries

½ teaspoon Cinnamon

¼ cup Coconut oil, melted

⅓ cup Maple syrup

Fresh orange zest and juice from 1 medium orange

1 teaspoon Vanilla extract

Directions

  1. Preheat your oven to 250°F and line a baking sheet with parchment paper.

  2. In a large mixing bowl, combine the oats, shredded coconut, chopped almonds, sunflower seeds, dried cranberries, and cinnamon. Mix all ingredients together until well blended.

  3. In a separate bowl, whisk together the melted coconut oil, maple syrup, orange zest, orange juice, and vanilla extract until fully incorporated.

  4. Pour the wet ingredient mixture over the dry ingredients and use a rubber spatula to gently fold everything together until the dry mixture is evenly coated with the liquid.

  5. Spread the mixture evenly across the prepared baking sheet in a single layer.

  6. Bake for 50 minutes until the granola turns golden brown. Do not stir during baking.

  7. Remove from the oven and place the baking sheet on a wire rack to cool completely.

  8. Once cooled, gently break the granola into bite-sized pieces with your hands. Store in an airtight container for up to 2 weeks.
