Ingredients

1 can (15 ounce) garbanzo beans, drained and rinsed

7 cloves fresh garlic, unpeeled

1/4 cup fresh lemon juice

1 cup tightly packed fresh kale leaves

1/4 cup tahini paste

1/2 teaspoon salt, or to taste

2 to 3 tablespoons water

Directions

  1. Preheat your oven to 400°F. Place the unpeeled garlic cloves on a small sheet of aluminum foil, wrap them loosely, and transfer to the oven. Roast for approximately 20 minutes until the cloves become soft and fragrant. Remove from the oven and let cool for a few minutes, then squeeze or peel away the papery skin to release the sweet, caramelized garlic.

  2. In a food processor, combine the drained chickpeas, roasted garlic, lemon juice, fresh kale leaves, tahini paste, and salt. Process until the mixture becomes smooth and creamy, scraping down the sides as needed. Add water 1 tablespoon at a time while blending until you reach your desired consistency.

  3. Transfer the hummus to a serving bowl and drizzle generously with olive oil. Serve with warm pita bread, crackers, or fresh vegetables such as carrots, cucumber, bell peppers, or cherry tomatoes for dipping.
