Ingredients
1 (3.4 ounce) box instant pudding mix, banana or vanilla flavored
2 cups skim milk
1 (8 ounce) container fat-free plain yogurt
2 medium bananas, peeled and sliced
Directions
Wash your hands thoroughly with soap and warm water before beginning preparation.
Pour the instant pudding mix into a medium mixing bowl. Add the skim milk to the bowl.
Whisk the pudding and milk together using a wire whisk, wooden spoon, or electric mixer on the lowest speed for approximately 2 minutes, until the mixture begins to thicken and become uniform.
Gently fold the plain yogurt into the pudding mixture using a spatula or spoon until fully incorporated and smooth.
Refrigerate the pudding mixture for at least 30 minutes to allow it to set and chill.
While the pudding chills, divide the sliced bananas evenly among 8 dessert cups or glasses, creating a layer at the bottom of each.
Spoon the chilled pudding mixture over the banana slices in each cup, dividing it equally.
Top each cup with additional fresh banana slices for garnish and added flavor.
Refrigerate the assembled pudding cups until ready to serve, for at least 5 minutes. For best flavor, refrigerate for several hours or overnight before serving.
