Ingredients

3 heirloom or ripe tomatoes, cut into small cubes

2 zucchini, thinly sliced

1 small red onion, shaved into thin slivers

1/3 cup crumbled feta cheese

1/4 to 1/3 cup loosely packed fresh basil, chopped

2 tablespoons extra-virgin olive oil

Salt to taste

Black pepper to taste

Directions

  1. Wash and core the tomatoes. Cut them into small, even cubes and place in a large bowl.

  2. Trim the ends of the zucchini and use a sharp knife or mandoline to slice them thinly lengthwise or into thin rounds. Add the zucchini slices to the bowl with the tomatoes.

  3. Peel the red onion and use a sharp knife or vegetable peeler to shave it into thin, delicate slivers. Add to the bowl.

  4. Add the crumbled feta cheese to the bowl.

  5. Drizzle the olive oil over the vegetables and cheese. Gently toss to combine, being careful not to break up the feta too much.

  6. Season with salt and black pepper to your taste, stirring gently to distribute evenly.

  7. Fold in the chopped fresh basil just before serving to preserve its bright flavor and aroma. Divide among serving bowls and serve immediately.
