Ingredients
1½ pounds Boneless, skinless chicken thighs
1 teaspoon Freshly ground black pepper
¼ teaspoon Ground turmeric
¼ teaspoon Cayenne pepper
1 teaspoon Ground cumin
1 teaspoon Dried thyme (or ajwain seeds as an alternative)
¼ teaspoon Garlic powder
1 teaspoon Bright red paprika
½ teaspoon Salt
3 tablespoons Olive oil, divided
Directions
Pat the chicken thighs dry with paper towels and cut them into bite-sized pieces, roughly 1 to 1.5 inches.
In a small bowl, combine the black pepper, turmeric, cayenne pepper, cumin, thyme, garlic powder, paprika, and salt.
Toss the chicken pieces with the spice mixture until evenly coated.
Heat 1.5 tablespoons of olive oil in a large skillet over medium-high heat.
Working in batches to avoid overcrowding, add the spiced chicken pieces to the hot skillet and sear for 3 to 4 minutes per side until golden brown and cooked through (internal temperature reaches 165°F).
Transfer the cooked chicken bites to a serving plate and repeat with the remaining olive oil and chicken pieces.
Serve the chicken bites warm as a main course.
