Ingredients

1 cup all-purpose flour

2 cups whole wheat flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

2 tablespoons unsweetened cocoa powder

1 ripe large banana, mashed

1 cup sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups non-fat yogurt

1 cup peanut butter chips

Directions

  1. Preheat your oven to 375°F. Line a standard 12-cup muffin tin with paper liners. In a medium bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and cocoa powder until evenly combined.

  2. In the bowl of an electric mixer, beat the mashed banana and sugar together on medium speed until well combined and creamy, about 1-2 minutes.

  3. Add the eggs one at a time, beating on low speed after each addition until fully incorporated.

  4. Mix in the vanilla extract until combined.

  5. Alternate adding the yogurt and flour mixture to the batter, beginning with the flour mixture and ending with the flour mixture. Add about one-third of the flour, then half the yogurt, another third of the flour, the remaining yogurt, and finally the last portion of flour. Mix on low speed after each addition until just combined; do not overmix.

  6. Using a rubber spatula, gently fold in the peanut butter chips until evenly distributed throughout the batter.

  7. Divide the batter evenly among the prepared muffin cups, filling each cup to the top or slightly higher.

  8. Bake for 20-25 minutes, until a cake tester or toothpick inserted into the center of a muffin comes out clean with no wet batter clinging to it.

  9. Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely before serving.
