Slow-Roasted Beef Brisket with Potatoes

4 lb. beef brisket, fat cap intact
3 lb. baby potatoes, halved
3 cups low-sodium beef broth
2 tablespoons vegetable oil
Salt to taste
Black pepper to taste
Directions
Preheat your oven to 425°F. Pat the beef brisket dry with paper towels, then season both the top and bottom generously with salt and pepper.
Spread the halved baby potatoes in an even layer across a large roasting pan. Drizzle with vegetable oil and season with salt and pepper, tossing gently to coat. Nestle the seasoned brisket on top of the potatoes, fat cap side facing up.
Place the pan in the preheated 425°F oven and roast for about 1 hour and 15 minutes, until the top of the brisket develops a deep golden-brown crust and the potatoes are beginning to soften and brown at the edges.
Reduce the oven temperature to 300°F. Carefully remove the potatoes from the pan if you prefer them roasted and crispy; alternatively, leave them in the pan for a stewed, more tender texture. Season the brisket again with salt and pepper on top. Pour the beef broth into the pan around the brisket (not over it), then cover the pan tightly with aluminum foil.
Return the covered pan to the 300°F oven and continue braising for approximately 2 hours and 30 minutes, until the beef is extremely tender and a fork inserted into the thickest part meets almost no resistance, indicating the brisket has reached the desired tenderness.
Remove the pan from the oven and let the brisket rest in the pan for 10 minutes before slicing. Carefully transfer the brisket to a cutting board and slice against the grain into uniform pieces for maximum tenderness. Serve the sliced brisket with the potatoes and braising liquid alongside.
