Ingredients

8 chicken wing sections (drumettes and flats)

1 tablespoon vegetable oil

1 tablespoon melted butter

¼ cup hot sauce

¼ teaspoon salt

¼ teaspoon black pepper

¼ teaspoon cayenne pepper (optional)

Directions

  1. Preheat your oven to 400°F. Line a roasting pan or large baking sheet with aluminum foil, then place a roasting rack or cooling rack on top of the foil.

  2. Pat the chicken wing sections dry with paper towels. In a medium bowl, combine the wings with the vegetable oil, tossing until all pieces are evenly coated.

  3. Arrange the oiled wings on the rack in a single layer, making sure they don't overlap.

  4. Place the pan in the preheated oven and bake for 50–55 minutes, until the internal temperature of the thickest wing section reaches 165°F and the skin is golden brown and crispy.

  5. While the wings are baking, prepare the buffalo sauce. In a medium bowl, whisk together the melted butter, hot sauce, salt, black pepper, and cayenne pepper if using. Set the sauce aside.

  6. Once the wings are cooked through and crispy, remove them from the oven. Transfer the wings to a large bowl and pour the buffalo sauce over them. Toss well until every wing is evenly coated.

  7. Serve the buffalo wings immediately while they are hot, with additional sauce on the side if desired.
