Ingredients
3 medium apples, peeled, cored, and sliced into 1/4-inch wide sticks
6 tablespoons unsalted butter, melted
1 cup quick-cooking oats
1/2 cup Panko breadcrumbs
1/4 cup granulated sugar
1/4 cup packed light brown sugar
1 tablespoon ground cinnamon
Pinch of pumpkin pie spice, nutmeg, and/or ginger, to taste (optional)
Caramel sauce for dipping, homemade or store-bought (optional)
Directions
Preheat your oven to 400°F. Line a baking sheet with parchment paper, a Silpat mat, or lightly coat with cooking spray. Peel, core, and slice the apples into thin sticks approximately 1/4 inch wide, keeping the slices slightly thinner rather than thicker for optimal crispness.
Place the apple slices in a large bowl and set aside. In a small microwave-safe bowl, heat the melted butter in the microwave for about 1 minute on high power.
Pour the melted butter over the apples and gently toss with a soft-tipped spatula until all pieces are evenly coated. Set the mixture aside.
In a separate large bowl, combine the quick-cooking oats, Panko breadcrumbs, granulated sugar, brown sugar, cinnamon, and any optional spices you choose. Stir all ingredients together until well combined.
Add the butter-coated apples to the dry coating mixture and toss gently but thoroughly with a spatula until each piece is evenly and completely coated.
Arrange the coated apple pieces on the prepared baking sheet, spacing them as far apart as possible to allow air to circulate freely around each one for maximum crispness. If any pieces are touching, carefully separate them. Any extra coating mixture remaining in the bowl can be sprinkled over the apples where it will bake into delicious crunchy granola bits.
Bake for 25 to 30 minutes, watching closely after 15 minutes. The apples are done when the coating is dry, set, and lightly golden brown. Be attentive to prevent the undersides from becoming overly browned or burning. Cooking time varies based on the moisture content of the apples—juicier apples will require longer baking. Remove when the apples appear tender and the coating is golden.
Serve the apple pie fries warm and fresh from the oven, preferably with caramel sauce for dipping. The texture will be tender like apples in an apple pie with a crispy breaded exterior, not firm like traditional french fries.
