Ingredients
1/4 cup sugar
1/4 cup water
2 ounces Irish whiskey
1 ounce fresh lemon juice
1/2 ounce simple syrup
Ice, as needed
4 to 6 ounces Irish lager, for topping
1 lemon twist, for garnish
Directions
Prepare the simple syrup by combining the sugar and water in a small saucepan. Heat over medium-high until the mixture comes to a boil, stirring occasionally to dissolve the sugar completely. Remove from heat and allow to cool to room temperature before using. The syrup can be made in advance and stored in the refrigerator for up to one month.
Fill a cocktail shaker with ice. Add the Irish whiskey, fresh lemon juice, and 1/2 ounce of the prepared simple syrup to the shaker.
Shake the mixture vigorously for about 10 to 15 seconds until well chilled and combined.
Strain the cocktail into a rocks glass filled with fresh ice.
Top the drink with 4 to 6 ounces of Irish lager, pouring gently to preserve the carbonation and create a layered effect.
Garnish with a lemon twist by expressing the oils over the drink and placing it on the rim or floating on top. Serve immediately.
