Garlic-Chili Shrimp Skewers with Peanut Noodles and Broccoli

Ingredients
8 ounces spaghetti
Coarse salt for pasta water
2 tablespoons peanut butter
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon light brown sugar
32 large frozen shrimp (1 1/2 pounds), peeled, deveined, and thawed
3 tablespoons garlic-chili oil
1 1/2 pounds (1 to 2 heads) broccoli, cut into florets with stems peeled and sliced 1/2 inch thick
Directions
Soak 16 wooden skewers in water for at least 10 minutes. Bring a large pot of salted water to a boil. Once boiling, add spaghetti and cook according to package directions until al dente, about 8 to 10 minutes. Drain and set aside, reserving 1/2 cup of pasta water for the sauce.
While pasta cooks, prepare the peanut sauce: in a small bowl, whisk together peanut butter, soy sauce, rice vinegar, and light brown sugar until smooth and well combined.
Pat the thawed shrimp dry with paper towels. Thread 2 shrimp onto each soaked wooden skewer.
Heat garlic-chili oil in a large skillet over medium-high heat. Once shimmering, carefully place the shrimp skewers in the pan and cook for 2 to 3 minutes per side, until shrimp are opaque and firm and reach an internal temperature of 145°F. Transfer to a plate.
In the same skillet, add broccoli florets and stems. Cook, stirring occasionally, for 4 to 5 minutes until the broccoli is tender-crisp. Season lightly with salt.
Return the cooked spaghetti to the pot. Add the peanut sauce and stir well to coat the noodles evenly, adding a splash of the reserved pasta water if needed to reach desired consistency.
Divide the peanut noodles among four plates or bowls. Top with broccoli and shrimp skewers. Serve immediately.
