Ingredients

2 tablespoons sweet chili sauce

1 zest of 1 orange

2 tablespoons fresh orange juice

1 garlic clove, crushed

1 tablespoon Thai red curry paste

¼ teaspoon salt

8 chicken drumsticks, skin removed, flesh slashed

Directions

  1. Preheat your oven to 400°F (200°C) and line a baking tray with aluminum foil. In a bowl, combine the sweet chili sauce, orange zest, orange juice, crushed garlic, Thai red curry paste, and salt. Stir until well blended.

  2. Pat the chicken drumsticks dry with paper towels. Make shallow slashes across the flesh of each drumstick to allow the marinade to penetrate. Add the drumsticks to the marinade bowl and toss until every piece is thoroughly coated.

  3. Arrange the coated drumsticks on the foil-lined baking tray, spacing them apart so they cook evenly. Pour any remaining marinade from the bowl over the chicken.

  4. Roast in the preheated oven for 35-40 minutes until the chicken is tender and cooked through, reaching an internal temperature of 165°F when measured at the thickest part without touching bone.

  5. Remove from the oven and let cool slightly. Serve warm, or wrap in foil and pack into a food container for later.
