Ingredients

1% milk fat cottage cheese

2 oz Cooked shrimp, medium

1 tbsp Capers

½ cup Fresh grapefruit segments, white or pink

1 tbsp Fresh lemon juice

1 tbsp Fresh herbs such as parsley or dill, chopped

to taste Salt

to taste Black pepper

Directions

  1. Place the cooked shrimp on a cutting board. Pat dry with a clean paper towel. Season all over with salt and pepper to taste.

  2. In a large bowl, combine the cottage cheese with the fresh lemon juice and chopped herbs. Stir gently until well combined. Set the dressing aside.

  3. Add the grapefruit segments to the bowl with the dressing and toss very gently to coat without breaking the fruit.

  4. Transfer the dressed salad to a serving plate or bowl. Top with the seasoned shrimp and scatter the capers over the top.

  5. Serve immediately while the shrimp is cool and the salad is fresh.
