Ingredients

1 medium English cucumber

1 1/2 teaspoons kosher salt, divided

2 to 3 medium lemons

1/2 clove garlic

1 cup plain Greek yogurt

1/2 cup fresh dill

1/2 cup fresh mint leaves

2 tablespoons extra-virgin olive oil

1/2 teaspoon freshly ground black pepper

Directions

  1. Prepare the cucumber for the tzatziki by trimming the ends, then halving it lengthwise. Using a spoon, gently scoop out the seeds from each half to reduce excess moisture. Grate the cucumber flesh on the large holes of a box grater into a fine-mesh strainer. Sprinkle with 1 teaspoon of kosher salt and let sit for 5 minutes, then press gently to release and drain excess liquid.

  2. Mince the garlic very finely and combine with the Greek yogurt in a medium bowl. Add the drained grated cucumber, fresh dill, and fresh mint leaves, stirring gently to incorporate all ingredients.

  3. Squeeze the juice from 2 to 3 lemons to yield approximately 3 to 4 tablespoons of fresh lemon juice. Whisk the lemon juice into the tzatziki along with the extra-virgin olive oil, the remaining 1/2 teaspoon of kosher salt, and the freshly ground black pepper. Taste and adjust seasoning as desired.

  4. Transfer the tzatziki to a serving bowl. Cover and refrigerate until ready to serve alongside your beef kofta.
