Ingredients
5 stalk celery stalks, washed and thinly sliced at an angle
5 from stalks celery leaves, washed and chopped
¾ whole Granny Smith apple, thinly sliced and cut into rough triangle shapes
3 tbsp dried cranberries
2 tbsp sliced almonds
2 tbsp Dijon mustard
2 tbsp fresh lemon juice
2½ tsp honey
¼ cup extra virgin olive oil
Directions
Rinse the celery stalks and leaves under cool water, then pat dry with paper towels.
Separate the celery leaves from the stalks. Finely chop the leaves and set aside. Thinly slice the celery stalks on an angle into bite-sized pieces.
Thinly slice the Granny Smith apple and cut the slices into rough triangle shapes. Place the apple slices, sliced celery, and chopped celery leaves into a large bowl.
Add the dried cranberries and sliced almonds to the bowl with the vegetables and apple.
Just before serving, whisk together the Dijon mustard, lemon juice, honey, and olive oil in a small bowl or jar until emulsified. Pour the dressing over the salad and toss gently until all ingredients are evenly coated. Serve immediately.
Comments
Every ingredient is stocked year-round at Harris Teeter, Food Lion, Publix, Walmart, ALDI, and Kroger—no special stops needed. The stated 20 minutes is honest; this is chop-and-toss work with no cooking. At roughly $8 to $10 total for two servings (celery, apple, and almonds drive the cost), you're at $4 to $5 per person, which is reasonable for a fresh salad. It's a straightforward side or light lunch that doesn't demand attention, though the small 2-serving yield means it doesn't stretch to family dinners or keep well as leftovers—best eaten the same day to avoid soggy celery.
