4 cups water
2 cups uncooked white rice
1 pound ground beef
2 cups fresh steamed green beans
1 1/2 cups fresh cooked corn kernels
1 can (15 ounces) no-salt-added tomato sauce
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Directions
Pour 4 cups water into a large pot and bring to a rolling boil over high heat.
Add 2 cups uncooked rice to the boiling water, stir once, and return to a boil.
Reduce heat to low, cover with a lid, and cook for 15 minutes without lifting the lid or stirring, until all water is absorbed.
While the rice cooks, place 1 pound ground beef in a large skillet over medium heat.
Cook the beef for 8 to 10 minutes, breaking it apart with a spoon, until no pink remains and it reaches an internal temperature of 160°F.
Carefully drain excess fat from the cooked beef.
Remove the rice from heat and let it stand, covered, for about 3 minutes to finish steaming.
Fluff the rice with a fork and arrange it on a large serving platter in the shape of a ring or doughnut, creating a hollow center.
To the skillet with the drained beef, add 2 cups green beans, 1 1/2 cups corn kernels, 1 can tomato sauce, 1/2 teaspoon garlic powder, and 1/2 teaspoon onion powder.
Stir well to combine and cook over medium heat for 3 to 5 minutes, stirring occasionally, until the mixture is heated through and steaming.
Carefully pour the hot beef and vegetable mixture into the center of the rice ring.
Serve immediately while hot.
