Ingredients
8 tablespoons salted butter
8 ears fresh corn, husks removed
1 tablespoon Cajun seasoning
1/4 cup Cotija cheese, crumbled
1/4 cup fresh cilantro, finely chopped
Directions
Preheat your grill to medium-high heat, approximately 400°F. If using a charcoal grill, ensure coals are evenly distributed.
In a small bowl, combine the softened butter with the Cajun seasoning, stirring until well blended and the spices are evenly distributed throughout the butter.
Place the corn ears directly on the grill grates. Grill for 12–15 minutes, turning every 3–4 minutes to achieve even charring and ensure the kernels cook through. The corn is done when light char marks appear and the kernels are tender.
Remove the corn from the grill and place on a serving platter. While still hot, brush each ear generously with the Cajun butter, making sure to coat all sides.
Top each corn ear with crumbled Cotija cheese and a sprinkle of fresh chopped cilantro. Serve immediately while the corn is still warm.
