Toasted almonds coated in a warm cinnamon-sugar mixture that crystallizes into a sweet, crunchy candy-like shell. These fragrant and satisfying almonds make an excellent snack or appetizer, ready in just 10 minutes.

Ingredients
3 cups raw whole almonds
1 cup sugar
¼ cup water
½ tbsp ground cinnamon
ground nutmeg
Directions
Line a large baking sheet with parchment paper and set aside.
In a large skillet over medium-high heat, combine the sugar, cinnamon, nutmeg, and water. Stir constantly for 1-2 minutes until the sugar is fully dissolved and the mixture is smooth.
Slowly add the raw almonds to the hot sugar mixture and stir continuously, ensuring every almond is evenly coated with the syrup.
Continue stirring for about 3-4 minutes. You will notice the liquid syrup gradually thickening and becoming more viscous. Keep stirring without stopping.
After about 5 minutes total from when you added the almonds, the sugar will begin to crystallize, giving the mixture a sandy or granular appearance. This is the desired texture.
Remove the skillet from heat once the sugar is fully crystallized and coats the almonds.
Carefully spread the cinnamon-sugared almonds onto the prepared parchment paper in a single layer, separating any clumps if needed.
Let cool completely at room temperature for at least 5 minutes before serving.
