Peanut Chicken Soba Noodles

Ingredients
½ cup creamy peanut butter
¼ cup soy sauce
3 tablespoons rice vinegar
1 tablespoon grated fresh ginger (or jarred ginger)
2 tablespoons vegetable oil
1½ cups cooked chicken breast, cut into bite-sized pieces
1½ cups frozen mixed vegetables (peas, corn, and carrots)
8 ounces soba noodles, cooked according to package directions
chopped roasted salted peanuts for topping
Directions
Cook the soba noodles according to the package directions. Drain and set aside.
In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, and ginger until smooth and well combined.
Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the cooked chicken pieces and stir-fry for 2-3 minutes until warmed through.
Add the frozen mixed vegetables to the skillet and cook for 3-4 minutes, stirring occasionally, until heated through and slightly tender.
Add the cooked soba noodles to the skillet and pour the peanut sauce over the mixture.
Toss everything together for 1-2 minutes until the noodles and vegetables are evenly coated with the sauce and everything is heated through.
Divide the noodle mixture among four bowls and top each serving with chopped roasted peanuts. Serve immediately.
