Ingredients

1½ lb bone-in pork rib chops, ¾-inch thick, trimmed of fat

¼ tsp salt

¼ tsp freshly ground black pepper

3 tsp canola oil, divided

1 medium medium onion, diced

1 clove garlic clove, minced

⅓ cup fresh orange juice

½ cup barbecue sauce

Directions

  1. Preheat your oven to 400°F.

  2. Pat the pork chops dry with paper towels. Season both sides evenly with salt and black pepper.

  3. Heat 2 teaspoons of canola oil in a large oven-safe skillet over medium-high heat until shimmering.

  4. Working in batches if needed to avoid crowding, sear the pork chops for 2 to 3 minutes per side until golden brown. Transfer to a plate.

  5. Add the remaining 1 teaspoon of oil to the skillet over medium heat. Stir in the diced onion and cook for 3 to 4 minutes until softened and beginning to caramelize.

  6. Add the minced garlic and cook for 30 seconds to 1 minute until fragrant.

  7. Pour in the orange juice and scrape up any browned bits from the bottom of the skillet. Stir in the barbecue sauce until well combined.

  8. Return the pork chops to the skillet, nestling them into the sauce and turning to coat.

  9. Transfer the skillet to the preheated oven and bake for 8 to 10 minutes, until the pork chops reach an internal temperature of 145°F at the thickest part.

  10. Remove from the oven and let rest for 2 minutes. Serve the pork chops topped with the sauce and caramelized onions.

All ingredients are staples at every Charlotte chain—pork chops, onion, garlic, orange juice, and barbecue sauce are reliable finds at Harris Teeter, Food Lion, Kroger, Walmart, and ALDI without a second stop. The stated 30 minutes is honest for a weeknight: searing chops takes 5 minutes, assembly another 5, then 20 in a 400°F oven. At roughly $2.50 per chop plus $0.30 in aromatics and sauce, you're looking at $3.10 to $3.50 per serving, which is solid for a complete dinner. The dish works for families—it's hands-off during the bake and doesn't demand last-minute fussing—but note that leftovers are best eaten the same night or reheated gently the next day, as the pork can dry out.
