Ingredients
3 large potatoes, peeled and cut lengthwise into quarters
3 tablespoons bacon fat or extra virgin olive oil
2 cups roughly chopped green and white onions, including green tops
2 cups roughly chopped bell peppers
Salt to taste
1 to 2 cups chopped ham
1/4 cup fresh parsley, finely chopped
4 large eggs, whisked together
Directions
Heat the bacon fat or olive oil in a large skillet over medium-high heat. Once shimmering, carefully add the potato quarters and cook for 12–15 minutes, stirring occasionally, until golden brown and tender when pierced with a fork. Season generously with salt.
Add the chopped green and white onions and bell peppers to the skillet with the potatoes. Stir well to combine and cook for 3–4 minutes until the vegetables begin to soften and the onions become translucent.
Scatter the chopped ham throughout the skillet and stir to distribute evenly. Cook for 1–2 minutes to warm the ham and allow its flavors to meld with the vegetables.
Reduce the heat to medium. Pour the whisked eggs evenly over the mixture in the skillet. Gently stir and fold the eggs with the potato and vegetable mixture, cooking for 2–3 minutes until the eggs are fully set and no liquid remains.
Sprinkle the fresh parsley over the top of the finished dish. Divide into 4 equal servings and serve hot from the skillet.
